Case Bianca's new wine cellar, a state-of-the-art structure designed to achieve even higher standards of quality, is situated in the municipality of Susegana. Indeed, the quality of the estate's wines commences with the care lavished on the vineyards and an array of winegrowing techniques: pruning, thinning and selection of the clusters are carried out while respecting nature and the oldest winemaking traditions.
The new wine cellar, which boasts cutting-edge equipment, has significantly increased the estate's production capacity, which includes the sparkling, semi-sparkling and still wines of the Case Bianche line.
The cellar is divided into large, well-lit areas that house the different phases of the winemaking process: crushing/destemming, pressing, refrigeration of must, fermentation, second fermentation in modern stainless-steel pressure tanks, bottling and storage of the bottled wine at controlled temperature.
The completely electronic management of the entire production cycle represents a particularly important aspect, as this system can store information to maintain the quality characteristics of each type of wine constant over the years.
The new wine cellar is situated close to the vineyards to minimise any loss of quality during transportation of the grapes, and its architecture respects the area's delicate environmental balance.
